Fall Spinach Salad with squash, pears, and chicken

Happy official fall! Nothing says fall better than a big salad with roasted veggies and fruit like pears and apples. Easily change up this recipe with different roasted veggies or protein options throughout the fall and winter. Serve as is for lunch or add a grain like quinoa for a more hearty dinner!

Fall Spinach Salad with Squash, Pears, and Chicken

INGREDIENTS

  • Spinach
  • 1-2 chicken breasts
  • 3-4 small pears
  • 1 small delicata squash
  • 1/2 small red onion
  • Drizzle of preferred cooking oil
  • Pinch of salt, pepper, dried thyme and oregano

DIRECTIONS

  • Preheat oven to 425 degrees F
  • Cut delicata squash down the middle lengthwise, scoop out seeds, and cut horizontally
  • Place on baking sheet, drizzle with oil, and place in oven for 20-25 minutes
  • In the meantime, heat a pan with oil over medium high heat
  • Season raw chicken with pinch of salt, pepper, thyme, and oregano

  • Add chicken to pan and cook until done
  • Slice pears and red onion
  • Once squash is done, start to assemble salad
  • Start with putting the spinach into a bowl and then add the squash, pears, red onion, and chicken on top
  • Drizzle your favorite dressing over the entire salad and toss

 

NOTES AND TIPS

  • We suggest trying out a maple or apple cider vinaigrette dressing to really bring out those fall flavors
  • Cook your chicken however you prefer - grilled, baked, or pan fried like us
  • If looking for a meatless option, substitute chicken with seitan, tofu, quinoa, or extra roasted vegetables
