Garlic Sauteed Kale with Poached Eggs

This recipe is great option for a simple, healthy breakfast. Serve alongside some roasted breakfast potatoes or on top of bread and enjoy!

Garlic sauteed kale with poached eggs

INGREDIENTS

  • 1 bunch of kale
  • 1-2 eggs
  • 1 clove garlic
  • 1 small onion
  • Red pepper flakes
  • Salt and pepper

DIRECTIONS

  1. Destem kale and rip into smaller pieces. Set aside
  2. Dice a small onion and clove of garlic
  3. Heat a pan over low heat with a drizzle of oil. Saute the kale with the onion and garlic. Add red pepper flakes, salt, and pepper as well. Saute until the kale is tender
  4. In the meantime, poach the egg. Bring water to a simmer and gently crack the egg into the water. Turn the heat off, cover the pan, and leave for 5 minutes. Once the 5 minutes is up, remove the egg with a slotted spoon
  5. Lay the sauteed kale out on a plate and place the egg on top
