These pickled beets are a great recipe for those tired of roasting them. Enjoy them on salads, sandwiches, or just by themselves!
- 3-4 beets
- 4 tbsp malt vinegar
- 2 tbsp sugar
- Wash beets well
- Heat pot with water until boiling. Add the malt vinegar and sugar, then add the beets.
- Boil until tender. Once tender, remove from the pot, allow to cool enough to handle, and cut the beets into coins
- Put the beets into a jar and fill with enough leftover liquid from the pot to fill the rest of the jar. Allow to sit for 3-7 days before eating
