1lb Rockfish (optional), cut into 2” wide strips, skin on
1lb purple potatoes, cubed
2 Plum tomatoes , chopped 2 inch pieces
1 small onion, sliced
2 cloves garlic, minced
1 tbsp Olive oil
1 tsp Paprika
½ tsp Salt
½ tsp Pepper
1 tbsp fresh parsley, chopped
Preheat oven to 400° F (if using cast-iron, place in oven first and preheat together)
Grease casserole dish or any oven-safe dish with olive oil.
Layer potatoes, onion, and garlic in dish
Top with rockfish (optional)
Add salt, pepper, paprika, and parsley
Cover dish with foil and bake for about 35 minutes, or until fish is flaky and potatoes are soft.
