Roasted Rainbow Carrots with Broth

Oven braised rainbow carrots

Rainbow carrots are a fall/winter staple! Try roasting them with chicken or veggie broth to bring this classic veggie to a whole new level.


  • 5-6 carrots
  • 2-3 cups broth
  • Sprigs of fresh herbs (we used rosemary, thyme, and oregano)


  1. Preheat oven to 400 degrees F
  2. Peel and cut carrots into coins
  3. Place carrots into shallow baking dish and pour in about an inch or two of broth
  4. Sprinkle the fresh herbs over
  5. Roast carrots for 20 minutes, covered
  6. Take carrots out and add more broth to the dish. The broth should be close to covering all the carrots. Place back into oven and roast covered for another 25 minutes
