Grain bowls are perfect for simple, versatile meals! Roast extra veggies and change up your grain or add a new sauce and enjoy the same meal in different ways throughout the week.

INGREDIENTS

  • 1 cup couscous
  • 1/2 small red onion
  • 1/2 cup cherry tomatoes
  • 1 small delicata squash
  • Handful of spinach

DIRECTIONS

  1. Preheat oven to 425 degrees F
  2. Cut delicata squash lengthwise, scoop seeds out of middle, and then cut horizontally
  3. Put on baking sheet, drizzle with oil, and bake for 20-25 minutes
  4. In the meantime, measure 2 cups of water into pot and allow to boil over high heat. Once boiling, stir in couscous and reduce to medium heat. Allow to simmer for 5-10 minutes or until water is absorbed and couscous is firm. Stir in spinach after couscous is cooked and allow to wilt
  5. In a separate pan over medium-high heat, add oil and saute red onion and cherry tomatoes for 4-5 minutes
  6. To assemble bowl, add couscous and spinach mixture into the bottom of a bowl. Add cherry tomato mixture on top and top off with roasted delicata squash

NOTES AND TIPS

  • Replace water for couscous with veggie or chicken broth to give the grain more flavor
  • Substitute couscous with whichever grain you prefer
