Scrambled Eggs with Spinach and Cherry Tomatoes

These scrambled eggs are easy to make and packed full of flavor! This protein-rich breakfast is a great option to help keep you full until lunch. Enjoy served over a piece of bread or by itself with a side of salsa or Sriracha. 

INGREDIENTS

Scrambled Eggs with Spinach and Cherry Tomatoes
  • 3 eggs
  • 3 tbsp of diced red onion
  • Handful of cherry tomatoes
  • Handful of spinach
  • Drizzle of oil

DIRECTIONS

  1. Dice red onion and chop cherry tomatoes into halves or thirds
  2. Heat pan with oil to medium-high and saute red onion for 3-4 minutes
  3. Add cherry tomatoes and spinach to pan and saute for another 2-3 minutes
  4. Crack 3 eggs into bowl and whisk
  5. Heat another pan with oil to medium and pour eggs into pan and allow to cook until you start to see bubbles
  6. Add spinach mixture and either scramble the egg or form into omelette
