Strawberry Panna Cotta

This is a delicious, super quick dessert. (Gelatin is not an ingredient that we would generally call for, because it isn't produced in a way that's in line with our ethical standards. If you're not comfortable using gelatin, use agar agar, and follow the package directions).
- 2 pints strawberries
- 1 can coconut milk
- 1/2 cup maple syrup
- a pinch or two of salt
- 2 packets gelatin, sprinkled over 1/4 cup cold water
- another 1/4 cup water
- In a blender, puree the strawberries, coconut, milk, syrup, and salt. If you don't want seeds in your dessert, strain the mixture through a sieve into a medium-sized mixing bowl. If you don't mind the seeds, pour the mixture into the bowl.
- Heat the second quarter cup of water. When it's boiling, remove it from the heat, and mix it with the gelatin. When the gelatin has dissolved, pour the gelatin into the strawberry mixture.
- Lightly oil a baking dish, a set of ramekins, some small mason jars, or any other vessels you desire. Pour in the panna cotta. Let set in the fridge for at least three hours, and up to 8 hours.
