Sunny Side Up Egg with Lacinato Kale

This breakfast is quick to make and a great way to start your day! If you're looking for an even more filling meal, try serving over a piece of bread.

Sunny Side Up Egg with Lacinato Kale and Shallots

INGREDIENTS

  • 2 eggs
  • 1 bunch of lacinato kale
  • 1/2 of a shallot
  • Preferred cooking oil

DIRECTIONS

Sunny Side up Egg with Lacinato Kale and Shallots
  1. Heat pan over medium-low heat and add a drizzle of oil
  2. Once hot, crack eggs directly into pan - we did one at a time but feel free to do both if you have a bigger pan
  3. Cook 2-3 minutes or until the white of the egg is opaque and the yolk is set
  4. In the meantime, de-stem the kale and massage it with a drizzle of oil to make it softer
  5. Dice 1/2 of a shallot
  6. Heat pan over medium heat and saute the kale and shallots for 5-7 minutes
  7. Plate the eggs and kale together and enjoy
