Vanilla Sage Roasted Squash

The vanilla and sage drizzle took this roasted squash to a whole new level. It's easy to make and tastes delicious! Serve as a side or add a grain, protein, and more roasted veggies to make a more complete meal.

INGREDIENTS

  • 1 winter squash (we used buttercup)
  • 3-4 leaves of sage
  • 1 tbsp vanilla extract (or 1 vanilla bean)
  • 1 tbsp oil (we used olive)
  • Salt and pepper

DIRECTIONS

  1. Preheat oven to 425 degrees F
  2. Cut the squash into cubes and remove the seeds
  3. Heat a pan to medium heat and add the sage, vanilla, oil, salt, and pepper. Cook for approximately 4-5 minutes, or until the sage is soft
  4. Drizzle the vanilla mixture over the squash right before placing it in the oven
  5. Bake for 15-20 minutes, or until squash is soft
