Veggie Taco with Mushroom and Sweet Potato

These veggie tacos are simple, filling, and delicious. Drizzle some salsa or hot sauce over them for a bit of a kick and enjoy!



  • Tortillas
  • Shiitake mushrooms
  • 1 sweet potato
  • 1 small onion
  • 1 clove garlic
  • 1 cup cooked quinoa
  • Pinch of salt/pepper


  1. Preheat oven to 425 degrees F
  2. Peel and chop sweet potatoes into chunks. Drizzle with oil and roast for 30-35 minutes
  3. Cook 1/2 cup dry quinoa with 1 cup of water or broth
  4. In the meantime, slice mushrooms, onions, and garlic
  5. Heat a pan over medium heat with a drizzle of oil and saute the mushrooms, onion, and garlic for approximately 10 minutes
  6. To assemble, scoop quinoa onto tortillas and then top with the mushrooms, onions, garlic, and roasted sweet potatoes
