All Souls Tortilleria in Warren, Vermont

Partners Joe Bossen (who you may also recognize from Vermont Bean Crafters, Sam Fuller, and Hubert D'Autremont work together to create a All Souls Tortillas. All Souls’ tortillas use locally-grown organic heirloom corn. They use "Wapsie Valley" variety heirloom corn from Aurora Farm in Charlotte, VT and Lakeview Organic Grain in Penn Yan, NY. They use a traditional process for flavor and nutritional benefits: corn is soaked with limestone to make "nixtamal," which is then stone-ground to make fresh masa (corn meal dough) each production day for the best tortillas around. No preservatives, no gluten, so added sweeteners or fats - just whole grain heirloom corn.

Braising Greens are a mix of greens including kale, chard, collards, mustard, bok choy, radicchio, and turnip greens. These greens can be steamed, sauteed, braised, or stewed. Be sure to use them within a few days so they don't have the chance to go bad!
