Bella Farm, Monkton Boro, Vermont

Bella Farm, owned by Rachel Schattman, is located in Monkton Vermont on 20.11 acres. Rachel’s primary crops include four varieties of basil and five varieties of garlic. Other vegetable crops grown at Bella Farm include salad mix, head lettuce, kale, collards, swiss chard, spinach, tomatoes, squash, cucumbers, peppers, eggplant and culinary herbs. Rachel is constantly rewarded by the challenges and learning that farming provides and greatly appreciates the Intervale Food Hub for the valuable service it provides to area farms and consumers. “I like knowing that my vegetables and pesto get commingled with the fine products of other professional and talented growers, and the whole package finds its way into workplaces and schools around Chittenden County.” (Photo courtesy of Bella Farm on Facebook!)

Eat This First:

  • Bok Choi is a crunchy, yet leafy green veggie that tastes best when fresh. Use in soups, saute it with garlic, or stir fry it with other veggies.
  • Plums ripen more quickly when left on the counter so be sure to keep these in the fridge to extend the shelf life. Eat with oatmeal in the morning, as a snack in the afternoon, or grilled with honey for dessert.

Fresh Spotlight

 

This week's basket is (as always) filled with locally sourced, nutritious goodies! Consumption of these plants will help you, your family and your community maintain healthy bodies and minds. While none of these fruits and veggies can cure serious illness, a healthy dose of this produce will help support mindful and intentional eating. So go ahead, open your basket and cook up a storm; your body will thank you!

Bok Choi:

Low in calories, and great for adding to any stir fry, bok choi is one of our favorite foods in this week's basket! Bok choi is dense in minerals and nutrients. It also contains high levels of selenium - a mineral that is important for thyroid gland function, as well as proper cell function.

Garlic:

Garlic is one of the most powerful plants we have in our diets. As the fall weather rolls around, and the promise of snow hangs in the clouds, the cold and flu season is upon us. So, add some garlic into your diet in order to promote an active immune system. Have high blood pressure? Garlic has been used in clinical studies to lower blood pressure and increase blood flow.

Apples:

We all know the saying, "An apple a day keeps the doctor away." Well, as it turns out, this could be true! Apples have an abundancy of powerful antioxidants that are great at fighting off free-radicals, or particles that have potential to damage cells. One antioxidant in particular, quercetin (found in high quanities in apples), helps reinforce neurological health by reducing death of cells in the brain.
