Besteyfield Farm provides the Intervale Food Hub with beautiful fresh eggs, raised just down the road. Ben's hens are raised on pasture in warmer months, and in greenhouses during colder months. Their diet is supplemented with lots of fresh food scraps, including fruit and vegetable pulp from Juice Bar VT.

Quick Tips: 

  • Eat this first: mesclun, kale, and watermelon radish
  • Watermelon radishes are really delicious and versatile! They can be eaten raw, pickled, or cooked. They can be braised or roasted like a turnip, or mashed like a rutabaga, though many prefer to eat them raw, since they lose their bright hue when cooked. They will make a bright, colorful addition to a snack tray or on top of a green salad! Similar to regular radishes, this variety does not have to be peeled before eating. Just make sure to wash them very well, and scrub away any dirt.

  • Sweet, nutty acorn squash is one of our favorite autumn ingredients, it can be added to soups, casseroles, hearty salads, or pastas! Here is a break down for how to cook acorn squash.

Quick Tips: 

  • Eat this first: mesclun, bok choy, mushrooms
  • Bok choy has a mild, borderline sweet flavor that works well with flavorful sauces, cooked meats, and other vibrant vegetables. The white stem stays crisp even after some cooking, while the leaf wilts and becomes silky. Bok choy will keep well for several days in the crisper drawer. Separate the stems and wash away any dirt caught near the base before eating.

  • Don't fear the Celeriac! Celeriac, aka celery root, can be eaten both raw and cooked. First, peel or trimmed off the rough outer layer with a knife. Celery root can be grated into salads, cooked in soups or casseroles in place of celery, or boiled with potatoes and mashed to add a light texture and celery flavor. The taste is very mild and pleasant, like celery. The root is crunchy when raw, like jicama, and when cooked, has the texture of a potato.

Quick Tips: 

  • Eat this first: Mesclun, Cranberries, and Fresh Herbs
  • Our bouquet garni from Red Wagon Plants includes rosemary, sage, and thyme. Bouquet Garni is traditionally used to infuse flavor into dishes that simmer and cook slowly - like chicken or pork roasts, stock, soup, and sauces. You can use them together or separately for different recipes. Add a bundle to your dish while it cooks and then easily remove it before serving. Or, chop your fresh herbs finely to incorporate into a dish.

  • To preserve fresh herbs: freeze in oil or make compound butter! Freeze: Chop them and freeze them in broth or olive oil in ice cube trays. Drop a cube into just about and sauce, saute, or soup for flavor. Butter: Mix chopped herbs, and some garlic if you'd like, into your Ploughgate Creamery butter to make a compound herb butter. Store in the fridge or freezer and add to vegetables, meat, fish, pasta, and sautes.

  • Fresh Cranberries: Don't be intimidated! Cooking or baking with fresh cranberries is easy - and their bright, refreshing flavor is a highlight of our season. There are a few recipe round-ups, like Delish's slideshow of 18 Savory and Sweet Recipes for Fresh Cranberries - to help you think outside the typical cranberry sauce box. Use them in anything from cocktails to sandwiches! One of our favorites is Fresh Cranberry Muffins.  

  • Asian pears are crisp and juicy, great for snacking, fresh salads (think pear slices, mesclun, and goat cheese), or baked in a crisp or a simple tart. If you had a Summer subscription, you already know that this has been an outstanding year for pears at Champlain Orchards! In comparison to the European variety - these have more crunch and grit. They will keep well in your refrigerator, but we suggest eating or cooking them soon to get the best flavor. To preserve them: try making a jam, a pear applesauce, or baking them into a cake or bread and freezing.

  • Eat this first: Mushrooms, romaine, & spigarello
  • Both Red Kuri squash and Sunshine Kabocha squash have dense, dark orange flesh and a sweet flavor. They can be used in everything from baking to soup to tempura. This is one of our staff favorites, and we love cutting it up and roasting with a drizzle of maple syrup or pureeing into a simple soup. 
     
  • Spigarello is a leafy green native to Southern Italy that's simliar to broccoli, except with spigarello, we eat the leaves instead of the flowers. The flavor is mild, grassy and sweet - like a cross between broccoli and kale!  You can use this in place of kale, chard, or spinach in other recipes. Try using spigarello in the like the sausage, kale, and squash pasta dish below, or this mushroom, goat cheese, and spinach pasta recipe!

  • Eat this first Mesclun, napa cabbage, kalettes
  • Kalettes are a unique cross between kale and Brussels sprouts. These little guys are sweet and peppery. They are great sauteèd, roasted, or tossed with a salad. We have included a couple different recipes below to get you all started!

  • Check out this article by Bon Appetit on the dozens of combos that go well with yogurt! Try adding your trail mix favorites - like sunflower seeds, chocolate chips, and raisins - to your next bowl of yogurt!

  • Napa cabbage is milder and sweeter than regular cabbage. Napa cabbage is often used in stir fries, soups, dumplings, and Korean kimchee. The wonderfully textured, ruffled leaves are excellent in fresh salads and slaws. When braised or simmered, the stalks and leaves become tender, juicy, and sweet.
