Garlic (the regular kind with off-white cloves) is slowly-aged until the cloves turn black and sticky, developing a rich umami flavor with hints of balsamic. Black garlic lacks the sharpness of typical garlic but can be used the same: in dressings or aioli, for garlic bread, or to season meats and vegetables. The flavor is much milder so add at the end of cooking for best taste. You can also make a paste with hot water and black garlic, which releases more flavors, and incorporate that into mashed potatoes, risotto, or other neutral foods.
