Crisp, mild salad green with a slightly nutty flavor. Also called miner's lettuce, as the gold miners ate wild-growing claytonia during the gold rush. One of our absolute favorites! Limited seasonal availability!

Trillium Hill Farm

Organic Vegetables, Grass-Fed Beef, Maple Syrup
Hinesburg, VT

Trillium Hill Farm is a diverse family farm in the Champlain Valley of Vermont. They grow vegetables, raise grass-fed beef, and operate a farmstand. Their goal is to better the land they steward in the process of feeding their neighbors. James, Sara, and daughter Ruby are the farmers. The land has been in James' family since 1801. They are honored and proud to be farming this land and growing food for our community.

Trillium Hill Farm is located on James' family's land, in the center of Hinesburg. James spent many hours as a child on the farm exploring its woods, running on its trails, sledding on its hills, and helping his family sugar in the spring. The land is currently owned by his mother and uncles, and has been passed down through the family for at least six generations. In 2006, James started a market garden on the land. In that first year James had one CSA member and sold vegetables at the Hinesburg Farmers' Market.

James met Sara soon after he decided to farm the family land, and together they have grown the farm significantly since that year. The farm has seen dairy goats, ducks, geese, and a large flock of laying hens. However, the focus of the farm has now shifted to growing vegetables for the local community through a farmstand and CSA, and wholesaling vegetables to nearby restaurants and stores. The farm is also home to a herd of grass-fed beef cattle which are slowly improving their land base.
