Ashed bloomy rind cheese from Barn First Creamery in Westfield, VT. This square-shaped cheese is dusted with vegetable ash, then aged for three weeks for a young, bloomy rind. 

Bright and tangy, this cheese has a dense paste and slightly musky flavor. (Similar to a goat's milk brie, with the classic chevre interior and cakier paste.) 

Great with white wines like Sauvignon Blanc and Chenin Blanc, lagers and Belgian-style beers, light and earthy red wines like Cabernet Franc and Merlot
