They focus a majority of their attention on winter storage crops like sweet potatoes, potatoes, onions, and winter squash, but they also grow spinach in the summer. Burnt Rock primarily distributes their vegetables through wholesale markets and the Burlington Winter Farmers' Market.

They love to be stored in a cool, dry place. They need ventilation to stay dry and shouldn't be exposed to light, which can cause large swings in temperature and encourages rot. Do not store with onions, as they will cause each other to over-ripen. Best eaten within 1 month.
