100% grass-fed beef from Grass Cattle Co. in Charlotte, Vermont. Flank steak is one of the best tasting cuts of beef, but can get tough if overcooked. Grilling, broiling, or searing is the best way to cook this lean cut - give it the minimum cook time to reach a safe eating temperature. We also recommend cutting flank steak against the grain and on a bias to tenderize the fibers. Cook to 130F and rest to final temp of 135F.

Pasture quality is key for reaching target average daily gains. Their team knows that proper rotational grazing improves the pasture, builds top-soil, and ensures quality feed for our animals. 

Steve Schubart, founder/owner, grew up in Vermont on a small hobby farm where his love of farming began. He received his BS in Diversified Agriculture from Vermont Tech, and founded Grass Cattle Co. in Shoreham in 2016, then relocated to Charlotte in 2018. He now owns the property and tends to the cattle every day.
