Ash veined bloomy rind goat's milk cheese from Blue Ledge Farm in Salisbury, VT. Named after the stones found along Lake Champlain (you know, those black ones with the thin lines of white rippling through). Lake's Edge is an earthy, musky, tangy goat cheese with a thin vein of vegetable ash running through the center. The cheese is rich and melts in your mouth, revealing its delicious flavors. Made from the milk of Blue Ledge Farm's herd of Alpine and La Mancha goats. Each wheel is coated with a delicate bloomy rind that develops over its six-week aging period.

Great with a light red wine, like a Pinot Noir.

Blue Ledge Farm is located on 150 acres in Salisbury, Vermont (just south of Middlebury). Their farm is conserved by the Vermont Land Trust, thereby ensuring that the land will always be open and never developed. In 2009, wetlands were identified as one of their great natural resources and so they agreed to conserve their fifty acres of wetland and return them to their natural state as a valuable part of their ecosystem. Their goats spend their spring, summer and fall days browsing in the woods, return to the barn for 4 pm milking and lounge around in a grass pasture as evening sets. Their goats live a life of luxury and as they run from job to job across the farm they sometimes wonder who works for who!
