Skyr is an Icelandic fermented dairy product typically made using the skim milk collected as a byproduct of the butter-making process. Villa Villekulla skyr is instead made using whole goat's milk, creating a flavor that is both rich and bright. VVF uses a rennet derived from cardoon thistles (yep - the spiky purple ones you often see roadside!) and is hand-ladled and strained to create a tart, thick spreadable cheese that's falls somewhere between chevre, labneh, creme fraiche and Greek yogurt. Use in place of those dairy items to experience skyr to its full effect! Get creative and try out some of the recipes on Villa Villekulla Farm's website. Skyr from VVF is only available through December so be sure to try some as soon as you can!

ABOUT VILLA VILLEKULLA: Villa Villekulla Farm is a woman-owned dairy farm run by Lauren Gitlin in Tunbridge. After working for years as a journalist and wine seller, Lauren moved to Vermont in 2014 to learn the art of cheese-making. In 2018, after taking in all the knowledge she could from the talented cheesemakers at Lazy Lady Farm and Consider Bardwell Farm, Lauren began building her own small goat flock. With the help of her goats plus Lauren's devoted care and attention, Villa Villekulla Farm was born.
