Stewing Hens

Stewing hens from Black Dirt Farm in Stannard, VT. These must be gently simmered for a few hours to get great chicken meat and stock. 

Stewing hens are laying hens who were no longer laying. They are raised on pasture and fed food scraps from their compost collection route. The hens are fed in an active composting system that allows them to culture healthy bacteria and fungi for them to forage on year round, providing a system that mimics the hens natural jungle feeding strategy. Their diet is supplemented with non-GMO organic grains, oyster shells, and certified organic mineral mix. Their chickens are raised without synthetic hormones or antibiotics.

To make prepare a stew hen, simply simmer in a stock pot on the stove top, or in a crock pot with vegetable scraps, bay leaves, salt, pepper and a dash of apple cider vinegar. Simmer for 4 - 24 hours. Strain, pull the meat off the bones. Season and use in a dish, or enjoy on its own.
