Blueberry Balsamic Vinaigrette

  • 1/3 cup fresh blueberries
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra-virgin olive oil
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper


  1. Combine all ingredients in a blender and blend well.
  2. Taste and adjust seasoning. You may need extra honey if your blueberries aren’t super sweet.
  3. Store, covered, in the refrigerator for up to 10 days.
