From Kathryn at Family Food on the Table; adjustments made for Intervale Food Hub members
- 1/3 cup fresh blueberries
- 1/4 cup balsamic vinegar
- 1/4 cup extra-virgin olive oil
- 2 teaspoons Dijon mustard
- 2 teaspoons honey
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Combine all ingredients in a blender and blend well.
- Taste and adjust seasoning. You may need extra honey if your blueberries aren’t super sweet.
- Store, covered, in the refrigerator for up to 10 days.
