A great option for breakfast, snacking, or to add protein to a fresh green salad
· 4 eggs, at room temperature, if possible
- Fill a medium pot with enough water to cover the eggs, and place over high heat. When the water boils, add eggs, cook for one minute, and then reduce heat to low. Let simmer for 10 minutes.
- Pour off the boiling water, and fill the pot with cold water to “shock” the eggs.
- When cool, you can peel the eggs and eat them, or store them in their shells, for later.
