Lemony Sugar Snap Pea Salad

  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon minced shallots
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 6 cups torn butter lettuce or lettuce mix
  • 1 cup sliced sugar snap peas
  • 3 tablespoons toasted sliced almonds or pumpkin seeds

How to Make It

  1. Combine first 7 ingredients in a large bowl; stir well with a whisk. Add lettuce, peas, and almonds/pumpkin seeds; toss gently to coat.
