- Mesclun greens
- 1 recipe "Blood Orange & Cranberry Vinaigrette, Plus Blood Orange Suprèmes"
- Roasted beets, cubed
- 1/2 cup toasted pumpkin seeds
- Place the mesclun greens in a large salad bowl.
- Toss with vinaigrette.
- Garnish with blood orange suprèmes, roasted beet cubes, and pumpkin seeds. This would be great with feta or goat cheese, too.
