Apple Fennel Salad
A simple, tangy salad that pairs perfectly with pork.
INGREDIENTS
  • 1 fennel bulb
  • 2 apples
  • 2 limes
  • 2 hot peppers
  • Cilantro
  • Salt
  • 3 Tbsp. olive oil
METHOD
  1. Slice fennel bulb, hot peppers, and apples very finely, ideally on a mandoline slicer.
  2. Zest and juice limes.
  3. Toss sliced fennel and apple with fennel fronds, lime, chiles, and a handful of cilantro in a large bowl.
  4. Season with salt and drizzle with olive oil.
