Beet & Feta Pasta
Bright and flavorful beet pasta, topped with feta and dill.
- 1lb pasta
- 8oz feta
- 3/4 oz fresh dill (optional)
- 1 tbsp lemon juice
- 1lb beet puree
- 4 Tbs. olive oil
- 1 tsp fine salt
- 4 garlic cloves, finely chopped
- red pepper flakes
- Cook pasta. While pasta is cooking, combine beet puree, olive oil, salt, garlic, and red pepper flakes.
- Drain pasta and toss with beet sauce, adding little by little.
- Top with feta, dill, and lemon juice. Enjoy!
