Pork Tenderloin with Rosemary Applesauce

Warming and tender, this dish is packed with flavor and juice.
INGREDIENTS

- 3-4 apples
- 1/2 cup white wine (optional, substitute water if needed)
- 1/4 cup water
- 2 tablespoons maple syrup
- 1" ginger
- half stick of butter or quarter-cup olive oil
- 1-1.5lbs pork tenderloin
- 1 rosemary sprig
- salt and pepper
- Fluffy mashed potatoes
METHOD
- Preheat oven to 350°.
- Strip leaves from 1 sprig rosemary, then mince. Combine with salt and pepper (and garlic powder, if desired) in a small bowl. Rub tenderloin with olive oil then coat with spice rub.
- Roast pork in shallow roasting pan until a thermometer reads 145F, roughly 1 hour
- Prepare applesauce: peel, core, and dice apples, then combine with apples, wine, maple syrup, water, ginger, cinnamon, and a tablespoon of butter. Cook (covered) over medium low heat until tender (roughly 12 minutes). combine the apples with the wine, water, sugar, ginger, cinnamon stick and 1 tablespoon of the butter and bring to a simmer. Cover and cook over moderately low heat until tender, then blend or mash. If needed, cook uncovered until desired consistency is reached.
- Prepare mashed potatoes using above recipe
- Remove tenderloin from oven and tent for 10 min, then serve warm with mashed potatoes and applesauce. Enjoy!
