Pork Tenderloin with Rosemary Applesauce
Warming and tender, this dish is packed with flavor and juice. 
  • 3-4 apples
  • 1/2 cup white wine (optional, substitute water if needed)
  • 1/4 cup water
  • 2 tablespoons maple syrup
  • 1" ginger
  • half stick of butter or quarter-cup olive oil
  • 1-1.5lbs pork tenderloin
  • 1 rosemary sprig
  • salt and pepper
  • Fluffy mashed potatoes

  1. Preheat oven to 350°.
  2. Strip leaves from 1 sprig rosemary, then mince. Combine with salt and pepper (and garlic powder, if desired) in a small bowl. Rub tenderloin with olive oil then coat with spice rub. 
  3. Roast pork in shallow roasting pan until a thermometer reads 145F, roughly 1 hour
  4. Prepare applesauce: peel, core, and dice apples, then combine with apples, wine, maple syrup, water, ginger, cinnamon, and a tablespoon of butter. Cook (covered) over medium low heat until tender (roughly 12 minutes). combine the apples with the wine, water, sugar, ginger, cinnamon stick and 1 tablespoon of the butter and bring to a simmer. Cover and cook over moderately low heat until tender, then blend or mash. If needed, cook uncovered until desired consistency is reached.
  5. Prepare mashed potatoes using above recipe
  6. Remove tenderloin from oven and tent for 10 min, then serve warm with mashed potatoes and applesauce. Enjoy!
